Basic Info

Long before Park City became a world class mountain resort and venue for the 2002 Olympic Winter Games, it was famous as a silver mining town, and boasts a lively and colorful past. Founded by prospectors in the late 1860's, Park City continued to mine silver until the early 1970's. The mining company, Park City Consolidated Mines, started the ski business in 1963, when they built the first lifts on what was then called Treasure Mountain. The Park City area now has three world class resorts: Park City Mountain Resort, Deer Valley Resort, and the Canyons Resort.

Ths cuisine we are creating at Chimayo is not like the typical southwestern fare you may have had before. We gather our sotherwestern culinary style from a geographical region extending from Southern Mexico to Southern Utah. We find this region to possess an incomparable integrity as rugged, varying, and vast as the southwestern landscape. Here at Chimayo we blend these integral Southwestern attributes with a progressive French-American technique of cooking creating our own special style of food preparation that is truly unique and different. The food here captures the best characteristics of the cuisine of the Southwest and rolls them seamlessly together with the more refined and elegant style of French-American gastronomy creating the special fare you will find on this menu.

In 2003, longtime manager of Café Terigo, Travis Axtell, brought style back to the old 1895 Telephone Building on Main Street when he renovated the space for his American Western restaurant, Purple Sage. After the painstaking overhaul, Purple Sage emerged as a stunningly beautiful restaurant unique to Park City. The long, narrow room is lined with purple, milk-glass lampshades that lend a soft, warm glow complimented by purple-tufted booths. Hand-painted scrims of purple sage stems hang from the ceiling, dividing the booths and creating an intimate dining experience. In the back, the bar area tables are surrounded by a western scene of bucking bronco riders, majestic purple mountains and lots of big blue sky, painted by local artist Wes Wright. Diners in the private dining room upstairs can watch skiers maneuver a tree-lined run or see bustling tourists on Main Street below. Summer dining is on the picket fence- enclosed deck, lined with umbrellas and a galaxy of tiny lights.
